The Southern Belles in my office need New Englanders expertise in this cooking area, please. Thank you all.

I am far from an expert in this field, but if your squid/calamari is tough you may be cooking it for to long. I found you just need to experiment with it. Cooking too long will make it tough, and the same result if not cooked long enough. Personally I like to coat the sqid with hot sauce, then cook on the grill for about 1minute per side.

The rule my momma taught me for squid, less than two or more than twenty. Which means if you grill it or fry it quick get it done and off the flame in two minutes or it starts getting tough. If you are going to stew them or some other longer treatment then you have to have the heat on them for at least twenty minutes. In between the 2 and 20 you can have Good Year Tire.

I did some cleaned calamari from Stop and Shop on the grill last week. I made a garlic and butter "marinade" and grilled it on high for about 2 minutes per side. Was cooked well and yummy!! It is so cheap too.
